Vinification and refinement
Harvested at optimal phenolic ripeness, it is vinified in
red at controlled temperature, undergoes a light maceration on the skins at the end of the alcoholic fermentation. It is
immediately transferred to oak barriques where it matures and refines
for a variable period, until its optimal expression is reached.
