Baccarossa
It features a deep and luminous ruby red. The nose is intense with notes of ripe red fruit, cherries preserved in alcohol, Mediterranean scrub, cocoa, cinchona, and iron, all framed by balsamic notes. The palate is very smooth, with tannins present but almost imperceptible due to its ripeness. It is balanced, elegant, and extremely pleasant, with an almost interminable finish. It pairs well with pasta dishes with game ragù, grilled red meats, medium-aged cheeses, and traditional Italian dishes (bucatini all’amatriciana, coda alla vaccinara, etc.).

Vinification and refinement
Maceration and fermentation of the grapes at room temperature
controlled until the end of the same, subsequent racking
and soft pressing of the marc. This is followed by a period of
refinement where it rests for about a year in woods of different
capacity, origin and roasting.
