Asonia

Asonia is a headstrong wine, embodying the passion, determination, and character of the woman it’s named after. Elegance reigns supreme in the bottle’s aesthetic—from its packaging to its label, which evokes a feminine world of times gone by—as well as in its texture. Asonia is indeed a beautifully consistent wine, made from 100% Malvasia di Candia grapes grown on red volcanic soil. On the nose, it offers intense aromas of tropical fruit, winter melon, wildflowers, bread crust, and a hint of spice on a iodine background. On the palate, it’s fresh and savory, with a creamy foam and an excellent fruity and saline finish. It’s a great aperitif, paired with appetizers and raw seafood, fresh cheeses and soft pasta, tempura, or throughout a meal.

Vinification and refinement

Soft pressing of the grapes, subsequent fermentation in
low temperature steel from which the base is obtained
sparkling wine, which then matures on its own yeasts with frequent
batonnage. The secondary fermentation takes place in ancient caves on the
yeasts, contact times on the yeasts can be achieved for
approximately 16 months before disgorgement.
